Butternut Squash Casserole

I was at Trader Joes and picked up there already cut up summer squash. This came out great.


2 packages butternut squash (2 pounds)
1/4 cup bread crumbs
1/4 cup parmesan cheese
several dallops of butter or margarine

I just put it all in the dish and then baked for an hour at 350 degrees. It came out tender and delicious. I actually took the leftovers for lunch. It was great.

We're FINALLY supposed to get a Trader Joe's here in Dallas, and I cannot wait! Whole Foods is Austin-based, but it is so pricey compared to Trader Joe's. Butternut squash if my favorite veggie.
