I never seem to tire of the tastes and smells that come with making mexican food. I found a recipe called <a href="http://www.recipe-diaries.com/2011/05/23/bubble-up-enchiladas-weight-watcher-recipes-part-2/" target="_blank">Bubble Up Enchiladas</a> and knew I had to try them.<br />
<br />
I use ground turkey, but you can make this with ground beef also. Brown the meat<br />
<br />

<div class="separator" style="clear: both; text-align: center;">
<br /></div>
<div class="separator" style="clear: both; text-align: center;">
Add in your choice of ingredients. I chose green chilies, black beans and corn. I only used half a can of the black beans and corn. I also used only half of the enchilada sauce.</div>

We began eating spaghetti a while back when we were looking for ways to cut down on calories.<br />
<br />
We actually put the squash in the microwave. While I admit one of them did explode, this was a wonderful way to cook the squash.<br />
<br />

<br />
We chopped up zucchini to put in the dish.<br />

<br />
Recipe<br />
<br />
2 spaghetti squash<br />
2 green zucchini cut into cubes<br />
2 carrots shredded<br />
1 package of your favorite cheese<br />
1 jar of your favorite spaghetti sauce<br />
<br />
Pierce the spaghetti squash several times with a knife. Cook on high 6-8 minutes. Allow to cool enough for you to handle. Remove the seeds and then with a fork. Then run your fork up and down the squash to remove the strands.<br />
<br />
Mix the spaghetti squash strands, cut up veggies and marinara sauce. Place in a casserole dish and top with cheese. Bake 50-60 minutes until done.<br />
<br />
Even with the cheese, this is a very low calorie meal.Unknownnoreply@blogger.com0tag:blogger.com,1999:blog-22252496.post-70187775487919974572012-04-15T19:03:00.000-07:002012-04-15T19:03:30.038-07:00Lemon BarsI was craving lemon bars today. I found a super easy recipe on the Pillsbury site suggesting sugar cookie dough as the base. Please forgive the photos, they were taken with my phone as my camera was not with me.<br />
<br />
1 tube of refrigerated sugar cookie dough (I used store brand)<br />
4 eggs, lightly beaten<br />
1 1/2 cups white sugar<br />
2 tablespoons flour<br />
<div class="eightGrid bottomSpacer"><div class="IngredientsContent" id="maincontentarea_0_fullcolumn_0_RecipeTab_IngredientsContent"><div itemprop="ingredients"><div class="name label">2 tablespoons butter or margarine, softened</div></div><div class="ingredient IngredientItem"><div itemprop="ingredients"><div class="name label">2 tablespoons grated lemon peel </div></div></div><div class="ingredient IngredientItem"><div itemprop="ingredients"><div class="name label">1/3 cup fresh lemon juice </div></div></div><div class="ingredient IngredientItem"><div itemprop="ingredients"><div class="name label">1 to 2 tablespoons powdered sugar</div><div class="name label"> </div><div class="name label">Unroll the cookie dough and create your base: </div></div></div></div></div><br />

Bake about 20 minutes at 350 degrees. Combine the remaining ingredients in a bowl and lightly beat with electric mixer.<br />

We had these for dinner last night and they were great!!<br />
<br />
2 chicken breasts cooked and chopped<br />
1 package cooked spinach<br />
1/4 spoon seasoned salt (I used Lawrys)<br />
1/4 cup soy milk<br />
3 eggs<br />
rice cheese (dairy free)<br />
<br />
I bought Pillsbury low fat flaky biscuits. Spray a muffin pan with non stick spray. Divide each biscuit into two pieces and line each muffin tin with 1/2 of a biscuit:<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiQ1XteS7_8eAa2cbM4W4EuqVEfrz34J1nVFh8BmSJVMYQ11N1iXQEVewntpcrpRTd5SBm2nMUU1BuAiCHbttI4lfIutVimko1mEiv6eT3DVrXUvdoE48BgYSc-sp0X5Z1twyxJ/s1600/006.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiQ1XteS7_8eAa2cbM4W4EuqVEfrz34J1nVFh8BmSJVMYQ11N1iXQEVewntpcrpRTd5SBm2nMUU1BuAiCHbttI4lfIutVimko1mEiv6eT3DVrXUvdoE48BgYSc-sp0X5Z1twyxJ/s320/006.JPG" width="320" /></a></div><br />
Next, add in some chicken:<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgIFI2EB89FDSfU_DrnFliKm6P_Hc1MfsfW4bgwHxQomJNWxVoZQOYAgpk47h04I_0gyK1EeaQdh28iVKozD7p_fMZh1yJLaVt5gc7enWx4K0OjDnrdIDlbYrcxPHD8EOWR1n9l/s1600/007.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgIFI2EB89FDSfU_DrnFliKm6P_Hc1MfsfW4bgwHxQomJNWxVoZQOYAgpk47h04I_0gyK1EeaQdh28iVKozD7p_fMZh1yJLaVt5gc7enWx4K0OjDnrdIDlbYrcxPHD8EOWR1n9l/s320/007.JPG" width="320" /></a></div><br />
Sprinkle cheese on top. We did some with yellow cheese and some with white cheese:<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiX7PQitqteWy6JNFct9NJPa3kRwSIvJmpAes-WQHTYAgswQHCdSrjGfTK-VPBuwxFMk46G_O9IGwJy-lPhrPqQ5f6HDpvDD9sro8qKJQdGS0Gfq86H8g2GEbxSipRKF_H0r3t9/s1600/008.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiX7PQitqteWy6JNFct9NJPa3kRwSIvJmpAes-WQHTYAgswQHCdSrjGfTK-VPBuwxFMk46G_O9IGwJy-lPhrPqQ5f6HDpvDD9sro8qKJQdGS0Gfq86H8g2GEbxSipRKF_H0r3t9/s320/008.JPG" width="320" /></a></div><br />
On top of the cheese, place a little bit of the cooked spinach:<br />
<br />

In a bowl, mix together the milk, Lawrys and eggs and place a large tablespoon full onto each muffin:<br />
<br />

Place the half of the biscuit on top and press in to seal as best as you can:<br />

These were delicious. There are some things I'll do differently next time. I'll add onions to the inside. I ended up chopping up onion and adding it on before eating. I'll also use a stronger flavored cheese for my portion.<br />

</div><div style="text-align: left;">Boil noodles according to package directions. Rinse with cold water. Beat the eggs and them mix together the noodles, eggs, butter and pineapple. Pour into lasagna pan. Mix together the cinnamon and sugar and sprinkle on top. Bake at 350 degrees about 45 minutes. The lasagna pan is deeper than a casserole dish and so I cooked a bit longer.</div><div style="text-align: left;"><br />

So I found this <a href="http://www.instructables.com/id/Mug-Brownie/">brownie in a mug recipe</a> and it's the best thing ever. I wish the photos looked better, but you'll have to trust me, I couldn't stop eating it. I ate the whole thing!!<br />
<br />
In a coffee mug, mix together:<br />
<br />
4 tablespoons flour<br />
4 tablespoons sugar<br />
2 tablespoons cocoa powder<br />
2 tablespoons vegetable oil<br />
2 tablespoons water<br />
dash of salt<br />
<br />
Mix it well:<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhFshWFYInK9XqSMoQtsxKy25G-ydWeLeDrC9pO0klAJDQ71tRFyTdxCb62DELDJ9uFsuPjgBEr3y0kIdykuKx9l0gJD_8m5RmEWhaVQMc35SLzK5_2gBNdxnZWSvOj90laP2pF/s1600/IMG_0852.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhFshWFYInK9XqSMoQtsxKy25G-ydWeLeDrC9pO0klAJDQ71tRFyTdxCb62DELDJ9uFsuPjgBEr3y0kIdykuKx9l0gJD_8m5RmEWhaVQMc35SLzK5_2gBNdxnZWSvOj90laP2pF/s320/IMG_0852.JPG" width="320" /></a></div><br />
Bake in microwave for about 1 1/2 minutes:<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjrJoMggcrww4xN1uRbG5f5zcOGGpvWO_jSGvEyyI7EpLm3zemIegEZFTKyuv-R-EreIVq7xrxZ1Fq6YaAvgp_jvmG-ZWZJcXQC0NZREg5_UoepSPvcuyQEwh2PMhW14U5P4jvN/s1600/IMG_0853.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjrJoMggcrww4xN1uRbG5f5zcOGGpvWO_jSGvEyyI7EpLm3zemIegEZFTKyuv-R-EreIVq7xrxZ1Fq6YaAvgp_jvmG-ZWZJcXQC0NZREg5_UoepSPvcuyQEwh2PMhW14U5P4jvN/s320/IMG_0853.JPG" width="320" /></a></div><br />
I did not put ice cream on top. I just ate it as is and as I said I finished it all. Next time I'm going to add mini chocolate chips. If you make this, make sure you use cocoa powder and not hot cocoa mix or chocolate milk mix. You need something with no sugar in it.<br />

<br />
This was simple and we loved it:<br />

Melt the butter and add in the lemon. Brush the lemon butter on the fish and then sprinkle with the Chex. We will make this again and we'll use more Chex. I was so uncertain how the Chex would taste on the fish that I used a small amount. My daughter told me we should double it next time.<br />

I wanted to use up lots of veggies and combine them all into this one casserole.<br />
<br />
2 zucchini<br />
3 small-medium carrots<br />
1/2 onion<br />
2 medium potatoes<br />
3 eggs (mine are extra large)<br />
4 tablespoons vegetable oil<br />
3 tablespoons flour<br />
salt and pepper to taste (I used about 1/2 teaspoon of each)<br />

Chop all of the vegetables. I have a few different choppers. I used my electric one for this so all was chopped in under 10 minutes.<br />

Mix everything together in a bowl and then pour into a lightly sprayed casserole dish. Bake at 350 degrees about 45 minutes. I had to cook mine a bit longer, but it was because I had other items in the oven that night also.<br />

<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjmVOvICHnaOLAAXM_ERVHKUb7-rT7MYVm6zFvK2tlLpiYT1Er-SVymPJeoSKbTXrt1eGZCVqbOP3xEcgoibEnVV3EgU7LRXfJfhSxkjjJ165aTsVYICuYCrnY_whWDOYBeRWJP/s1600/IMG_0775.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjmVOvICHnaOLAAXM_ERVHKUb7-rT7MYVm6zFvK2tlLpiYT1Er-SVymPJeoSKbTXrt1eGZCVqbOP3xEcgoibEnVV3EgU7LRXfJfhSxkjjJ165aTsVYICuYCrnY_whWDOYBeRWJP/s320/IMG_0775.JPG" width="320" /></a></div><br />
Make your favorite meatball recipe. Here's a <a href="http://audreysspot.blogspot.com/2011/12/baked-meatballs-non-dairy.html">meatball recipe</a> I posted last month. Place your meatballs in the meatball cooker:<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhuMf5tSX0_e1FDTvDfj_noa5ENZcfpRazuPv80hC8XdjNg88ZA1NRQTArUePbVxKXS2H5LrwdsgmPCalB0pPBgfC7UGwjqeT-5cOjj44c8NY1U5D98zaD0XOc4wZoR1rN_eYzd/s1600/IMG_0776.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEhuMf5tSX0_e1FDTvDfj_noa5ENZcfpRazuPv80hC8XdjNg88ZA1NRQTArUePbVxKXS2H5LrwdsgmPCalB0pPBgfC7UGwjqeT-5cOjj44c8NY1U5D98zaD0XOc4wZoR1rN_eYzd/s320/IMG_0776.JPG" width="320" /></a></div><br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgwgDJhW_RO4nDoQgaWF6edVUY5R5MVXgMglJ20N_FJofL5JUkRKINZZ802qkdzHyKqqSSrSip2QT4-2ub9ckgcoUuMyy3yTtEg1dM3D7dzbClIuKmfIPrwKAvAF23pfk9OssSK/s1600/IMG_0777.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgwgDJhW_RO4nDoQgaWF6edVUY5R5MVXgMglJ20N_FJofL5JUkRKINZZ802qkdzHyKqqSSrSip2QT4-2ub9ckgcoUuMyy3yTtEg1dM3D7dzbClIuKmfIPrwKAvAF23pfk9OssSK/s320/IMG_0777.JPG" width="320" /></a></div><br />
I baked at 350 degrees for about 45 minutes. While they were cooking I made the sauce. This is one cup grape jelly and two cups chili sauce.<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgkuzMlN5zizLsy82Cv_AFGc5Z3CwJ2-c7OlXDPU_O0PgSAsFY7VMicL-S41yKSxxrzMsoNasKQxbCg3aLTJRqLm_5vgcVjOEc_ZZ5Tcw18toLbIDohpPvQRcckaGrQqkiwRl2z/s1600/IMG_0778.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgkuzMlN5zizLsy82Cv_AFGc5Z3CwJ2-c7OlXDPU_O0PgSAsFY7VMicL-S41yKSxxrzMsoNasKQxbCg3aLTJRqLm_5vgcVjOEc_ZZ5Tcw18toLbIDohpPvQRcckaGrQqkiwRl2z/s320/IMG_0778.JPG" width="320" /></a></div><br />
I brushed sauce on each meatball, then baked another ten minutes.<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjVAjKMoQWkFUEKZPg0XYduK6JEcMB73dIErljCWPAwM8vReU1vjI-u_2nwluWJNz0JxBW_5Qnuv6olzmUZ-X6CIe1LjcJDVkCErPHVWiffOTLe8FkAYoBi1xpQB-hpj_fYCDLI/s1600/IMG_0779.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjVAjKMoQWkFUEKZPg0XYduK6JEcMB73dIErljCWPAwM8vReU1vjI-u_2nwluWJNz0JxBW_5Qnuv6olzmUZ-X6CIe1LjcJDVkCErPHVWiffOTLe8FkAYoBi1xpQB-hpj_fYCDLI/s320/IMG_0779.JPG" width="320" /></a></div><br />
I severed over rice as I love rice with sauce. I should mention, the meatball rack is removable leaving an awesome baking tray underneath.<br />

<br />
1 box stuffing mix<br />
8-12 ounces of broccoli florets<br />
vegetable broth (you can also use chicken broth)<br />
chicken<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjf4_vX6NcpElzOjBiZRkAVbnYTicGUxQp8DJpNDVIh_UJnEKS6G1228VphAig_IMj2rdK6Xa66DEXsoXAatyua1jf6e_TSKzlFnIXF6t-x-3jGrvlC2trLuKGw4Mo1QpQ2isUy/s1600/IMG_0817.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjf4_vX6NcpElzOjBiZRkAVbnYTicGUxQp8DJpNDVIh_UJnEKS6G1228VphAig_IMj2rdK6Xa66DEXsoXAatyua1jf6e_TSKzlFnIXF6t-x-3jGrvlC2trLuKGw4Mo1QpQ2isUy/s320/IMG_0817.JPG" width="320" /></a></div><br />
I cooked the broccoli just so it was soft enough to put through the chopper. Then I made the stuffing using vegetable broth in place of the water called for. I did NOT use butter or margarine. Once the stuffing was done, I mixed in the broccoli and spread in the bottom of a casserole dish.<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjldZyNZGmkLW4T6BP3R5CRwTrKBGE3Daz5SKnZ3ak0mDThp7HCRDLYosCJXTPCutkwgx4aEGc0jMBZ40b7D90CLA38PsFZTLvBulbm_29GBtbJxHjbipipGj9GuDdIFidIohvj/s1600/IMG_0818.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjldZyNZGmkLW4T6BP3R5CRwTrKBGE3Daz5SKnZ3ak0mDThp7HCRDLYosCJXTPCutkwgx4aEGc0jMBZ40b7D90CLA38PsFZTLvBulbm_29GBtbJxHjbipipGj9GuDdIFidIohvj/s320/IMG_0818.JPG" width="320" /></a></div><br />
I then seasoned the chicken with paprika and a little bit of Lawrys seasoned salt.<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjdKKZWGeQvDN-S9x2HNT8V1JyRIylSHVUqUmtWxGoaB8UKeuOGeDhETMEz7GoUhCOd0Y6yW63pCzrDecSrxftRFztDSFdTutShuRQgNls3E3eFnuE9VsWgeH0-yLKADFVY0VZp/s1600/IMG_0819.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjdKKZWGeQvDN-S9x2HNT8V1JyRIylSHVUqUmtWxGoaB8UKeuOGeDhETMEz7GoUhCOd0Y6yW63pCzrDecSrxftRFztDSFdTutShuRQgNls3E3eFnuE9VsWgeH0-yLKADFVY0VZp/s320/IMG_0819.JPG" width="320" /></a></div><br />
Bake at 350 degrees about 45 minutes, until the chicken is done. I apologize for this last photo, the steam got in the way of the photo.<br />

As I said we both loved it. My daughter said she'd like me to make this again. For a household that seldom repeats a recipe this quite a compliment.<br />

At home, we don't have a campfire and I was craving a s'more so I made them right in the oven.<br />
<br />
Graham crackers<br />
Mini marshmallows<br />
Hershey's Chocolate Bar<br />
<br />
Lay your graham crackers out on a covered cookie sheet. I used tinfoil to cover mine. Next time I'll use parchment paper.<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgXXVJ8ELrwRobx0kXhZqxFpIwVStMUSNb3cgGh-aeTmrRmTwGNLgOHMM-seXjn1cjmXuY7_CfU94GkdYrH7xhBVFYeviNHdl1kfm_HuMmSGX6TswRigXpfpnXCEj8p_T2plyAm/s1600/IMG_0803.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEgXXVJ8ELrwRobx0kXhZqxFpIwVStMUSNb3cgGh-aeTmrRmTwGNLgOHMM-seXjn1cjmXuY7_CfU94GkdYrH7xhBVFYeviNHdl1kfm_HuMmSGX6TswRigXpfpnXCEj8p_T2plyAm/s320/IMG_0803.JPG" width="320" /></a></div><br />
Sprinkle marshmallows on top of the graham crackers. Set the oven to 350 degrees and let the marshmallow get a little brown.<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg-hADlr-gACJzRHe01BZHPKxNehk0_ZeHzX1rfQHeAOzsi8oqt_C631HY06Rl_AdbE5_kV4Xli1woL8XMTHl871zLg7IsLvEzti78PMN4EgJoFKtdbDFyIs8DdYK9u6_vRSLUk/s1600/IMG_0804.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEg-hADlr-gACJzRHe01BZHPKxNehk0_ZeHzX1rfQHeAOzsi8oqt_C631HY06Rl_AdbE5_kV4Xli1woL8XMTHl871zLg7IsLvEzti78PMN4EgJoFKtdbDFyIs8DdYK9u6_vRSLUk/s320/IMG_0804.JPG" width="320" /></a></div><br />

Immediately put the chocolate on top of the marshmallows. You need the heat from the marshmallows to melt the chocolate.<br />
<br />

I found this <a href="http://allrecipes.com/recipe/easy-zucchini-bake-with-cheese/detail.aspx">recipe</a> and followed it to the letter. We loved it.<br />
<br />
1 pound ground turkey<br />
2 large zucchini, halved lengthwise<br />
3 cups Classico Tomato and Basil Sauce<br />
1 - 8.75 can whole kernel corn, drained<br />
1 cup shredded cheese<br />
<br />
Place the sliced zucchini in the casserole dish:<br />

The zucchini on the bottom was not "soft" which for us was just fine. We ate this for dinner and then I took it for lunch the next day and finished it off. We really did enjoy it.<br />

When it comes to noodle kugel there are as many different recipes as there are for chocolate chip cookies. Each recipe is a bit of a twist from the others.<br />
<br />
This is my friend Linda's recipes. It's one of my daughters favorites.<br />
<br />
1 pound wide egg noodles<br />
16 ounces sour cream<br />
16 ounces cottage cheese<br />
1 cup milk<br />
1/4 pound butter<br />
3/4 cup sugar<br />
4 eggs, beaten<br />
1/2 teaspoon salt<br />
1/2 cup raisins (optional)<br />
<br />
Topping:<br />
1 cup corn flake crumbs<br />
1 teaspoon cinnamon<br />
1/2 cup brown sugar<br />
<br />
Boil noodles according to package directions, drain and place in a bowl.<br />
<br />
<div class="separator" style="clear: both; text-align: center;">
<a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEj6piH4vb7YezUkPSKWwmWPyEDa6eV3aQ1zfLcCnWo2pet2GhYLPGkgDwhvjcnEc-cAqf0hOepXAZewvLFy7I0nGx-z-6R1_sDFFLKxDUfLaQHHoJf0MRiaQ461jIKT_4RzeKoQ/s1600/IMG_0762.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEj6piH4vb7YezUkPSKWwmWPyEDa6eV3aQ1zfLcCnWo2pet2GhYLPGkgDwhvjcnEc-cAqf0hOepXAZewvLFy7I0nGx-z-6R1_sDFFLKxDUfLaQHHoJf0MRiaQ461jIKT_4RzeKoQ/s320/IMG_0762.JPG" width="320" /></a></div>
<div class="separator" style="clear: both; text-align: center;">

This is delicious. We did use low fat cottage cheese and non fat sour cream in ours. I also used vegan margarine, not real butter.<br />

This is just a super quick easy meal. I used one pound of ground turkey and about a half bag of spinach. I added in some seasoned salt and mixed it all together. We did add on a slice of rice cheese at the end, which added to the flavor. They came out great.<br />

Have you ever added veggies to your burgers?<br />

There are only 4 ingredients:<br />
<br />
1 envelope Hidden Valley Ranch salad dressing<br />
1 cup Rice Krispies, crushed<br />
Mayonnaise or yogurt or egg white<br />
Chicken<br />
<br />
In a Ziplock, crush the Rick Krispies. Add in the ranch dip and mix. Coat your chicken with either mayonnaise, yogurt or egg white and then shake in the mixture.<br />

<br />
1 - 8 ounce package cream cheese, softened<br />
1/2 package Hidden Valley Ranch envelope<br />
1 - 4 ounce can of chopped olives<br />
1/2 - 11 ounce can whole kernel corn, drained<br />
1/2 - 4 ounce can of chopped green chilies, drained<br />
<br />
The recipe also called for 1/2 cup chopped red bell pepper which I did not use.<br />
<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEj7tRNV7Z3hoOfh8f3dUDyMXHgewoKaF_nC7lty_WvnxrZ4koCK_MTHNPzPDADmWp8Y4ZlvovjwuKG0CdRh0_tzOOGu7hAuYJ_-VINSVE09f5GkbSaovpp4llZQXRP4yz4kTI9v/s1600/IMG_0734.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEj7tRNV7Z3hoOfh8f3dUDyMXHgewoKaF_nC7lty_WvnxrZ4koCK_MTHNPzPDADmWp8Y4ZlvovjwuKG0CdRh0_tzOOGu7hAuYJ_-VINSVE09f5GkbSaovpp4llZQXRP4yz4kTI9v/s320/IMG_0734.JPG" width="320" /></a></div><br />
With an electric mixer, mix together the cream cheese and ranch dressing powder until smooth. Hand mix in remaining ingredients. Chill to mix flavors and serve.<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiXETDcN6jI53ayTZyS8mwVjrTUdrQ_OtCVbYlzPSNgu-NPLJ1Fsf7j4U84wdCFtfiN4Tu4rt6hJ8vD0RKLxiBve3T9IUF13GfYJvmJPcnVR0Fd8BPfWU2to4AvGZ97nTUjnfl6/s1600/IMG_0739.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEiXETDcN6jI53ayTZyS8mwVjrTUdrQ_OtCVbYlzPSNgu-NPLJ1Fsf7j4U84wdCFtfiN4Tu4rt6hJ8vD0RKLxiBve3T9IUF13GfYJvmJPcnVR0Fd8BPfWU2to4AvGZ97nTUjnfl6/s320/IMG_0739.JPG" width="320" /></a></div><br />

This is a recipe I'll definitely make again. I hope you'll allow me a shameless plug. I sell <a href="http://www.youravon.com/audreyo">Avon</a> and was excited to order their <a href="http://www.youravon.com/audreyo">heart shaped baking pan</a>. These cookies can absolutely be made a on a regular cookie sheet, in fact, I used a cookie sheet for the remaining batter. If you want to make these dairy free, use non dairy chocolate chips in place of the mixed chips I used.<br />
<br />
1/2 cup shortening (I use Earth Balance shortening)<br />
1/2 cup white sugar<br />
1/2 cup brown sugar<br />
1/2 cup peanut butter (I used creamy)<br />
1 cup all purpose flour<br />
1/2 - 2/3 cup chocolate chips (I used the Nestle peanut butter and chocolate chips)<br />
1 egg<br />
1 teaspoon vanilla<br />
1 teaspoon baking powder<br />
1/4 teaspoon salt<br />
<br />

This was so easy to make and quite tasty.<br />
<br />
2 chicken breasts<br />
1/2 cup orange marmalade<br />
2 tablespoons soy sauce<br />
2 teaspoons dry mustard<br />
<br />
<div class="separator" style="clear: both; text-align: center;"><a href="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjBsvApEtkKh8yQy4m6Rc8xEwAyytOSAqCGwG4E-244Y2sjkNYM0mTPH75nrjjumWHze5QwaNkxbnLyipvo9C5ubE8h4HBztRKFaPb9oyhOAY0qx4j0Jq1QHNejsw7QqHFOweWS/s1600/IMG_0727.JPG" imageanchor="1" style="margin-left: 1em; margin-right: 1em;"><img border="0" height="240" src="https://blogger.googleusercontent.com/img/b/R29vZ2xl/AVvXsEjBsvApEtkKh8yQy4m6Rc8xEwAyytOSAqCGwG4E-244Y2sjkNYM0mTPH75nrjjumWHze5QwaNkxbnLyipvo9C5ubE8h4HBztRKFaPb9oyhOAY0qx4j0Jq1QHNejsw7QqHFOweWS/s320/IMG_0727.JPG" width="320" /></a></div><br />

Mix it all together and pour on the chicken. Bake at 375 degrees about 45 minutes. I opened the oven twice to baste the chicken.<br />
<br />
It came out great, however next time I will probably try real mustard for a stronger flavor.<br />
