Turkey, Spinach and Brown Rice (dairy free)

This was so simple to make and we loved it!

1 cup brown rice
1 cup liquid (we used vegetable broth)
8 ounces spinach
Turkey tenderloins (I found these on sale at Trader Joes)
Italian seasoning, paprika

Pour the rice into the casserole dish. Cover with vegetable broth. Add the spinach on top.


 I seasoned the turkey with paprika and Italian seasoning.



I covered the casserole dish with foil for the first 30 minutes. Then uncovered and baked an addition 30 minutes at 350 degrees.


As I said we both loved it. My daughter said she'd like me to make this again. For a household that seldom repeats a recipe this quite a compliment.

Left Over Turkey Quiche

I was looking for a recipe to use up some leftover turkey and found this turkey quiche. We will so make this again. It was soooo good!!



1 cup Bisquick
1 1/2 tablespoons non dairy margarine
4 eggs
1/2 cup olive oil
3 cups zucchini, chopped
1/2 cup shredded parmesan cheese
1/4 cup onion flakes (I did not have real onion in the house)
1/2 teaspoon basil
chopped left over turkey or chicken
1/2 cup hard swiss or other flavorful cheese

Mix eggs, oil and Bisquick until blended. Add in remaining ingredients and mix well. Pour into greased pie pan and bake at 350 degrees about 30 minutes. Test for doneness. I baked another 12 minutes and it was done.

I wasn't sure if my daughter would like this. She said "mom it's like a turkey sandwich, turkey, bread and cheese, yum!!"

As I said, we'll make this again. We really loved it.

Turkey and Stuffing Roll Ups

This was so much fun to make. I bought turkey lunch meat at Trader Joe's and had some left over.

sliced lunch meat
stuffing
turkey gravy

That's it, just the 3 ingredients. Put stuffing inside the slice of turkey and roll it up.


 Arrange in a casserole dish and then pour the gravy on top


Bake about 20 minutes at 350 degrees.


I served with cranberry sauce and a salad. It was a fun way to use up the left over lunch meat.

Turkey and Stuffing Casserole

This is a fun casserole using stuffing as a "crust" and then filling with cubed turkey or chicken.

1/2 cup butter
1 1/4 cup boiling water
3 1/2 cups seasoned stuffing mix
1 - 2.8 can french fried onions
1 can cream of celery soup
3/4 cup milk
1 1/2 cups cooked turkey, cubed
1 - 10 ounce package frozen peas, thawed

Mix the butter and water and stir until butter melts. Pour the water over the stuffing mix and toss lightly to coat. Stir in half of the onions.

Spoon the stuffing into a 9 inch baking dish. Press the stuffing up the sides to form a "crust."

In a bowl, combine the milk, soup, turkey and peas. Pour into the baking dish, on top of the crust. Bake uncovered for 30 minutes at 350 degrees. Top with remaining onions and cook 5 minutes longer.

Note: Try other soups such as cream of mushroom or cream of asparagus. You can also use mixed vegetables instead of peas.
