Vegetable Kugel/Casserole (non dairy)

I was so happy when my daughter told me she liked this. I wanted to use up lots of veggies and combine them all into this one casserole.

2 zucchini
3 small-medium carrots
1/2 onion
2 medium potatoes
3 eggs (mine are extra large)
4 tablespoons vegetable oil
3 tablespoons flour
salt and pepper to taste (I used about 1/2 teaspoon of each)

Chop all of the vegetables. I have a few different choppers. I used my electric one for this so all was chopped in under 10 minutes.

Mix everything together in a bowl and then pour into a lightly sprayed casserole dish. Bake at 350 degrees about 45 minutes. I had to cook mine a bit longer, but it was because I had other items in the oven that night also.

So is this kind of a more cake-y/fluffy version of quiche? Sounds so good (and easy!)--definitely a good weeknight meal!

I wish you could cook for my family. (Or at least me.)
