1 bag of frozen spinach, thawed and drained
3 eggs
1/2 cup mayonnaise
1/2 envelope onion soup mix
crushed corn flakes
Mix the spinach, eggs, mayonnaise and onion soup mix together and pour into a casserole dish. Sprinkle with corn flake crumbs. Bake at 350 degrees 30-40 minutes.

Yes, use buttermilk or sour cream or even yogurt depending on what taste you like. Do you like Miracle Whip? I've used that sometimes instead of may.
Hey I like spinach and this looks easy. Where do I get the envelope soup mix? Does Costco have it? I'm going there tomorrow.
Mmmm--my kids aren't big fans of spinach, but with this recipe, they might turn into ones!
