Spinach Kugel/Spinach Casserole (dairy free)

As I've posted before, we try hard to make recipes that are dairy free when we can. We all love spinach and so we enjoyed this dish.



1 bag of frozen spinach, thawed and drained
3 eggs
1/2 cup mayonnaise
1/2 envelope onion soup mix
crushed corn flakes

Mix the spinach, eggs, mayonnaise and onion soup mix together and pour into a casserole dish. Sprinkle with corn flake crumbs. Bake at 350 degrees 30-40 minutes.

Do you think I could sub the mayo for anything? I can't tolerate mayo. :(

Yes, use buttermilk or sour cream or even yogurt depending on what taste you like. Do you like Miracle Whip? I've used that sometimes instead of may.

Hey I like spinach and this looks easy. Where do I get the envelope soup mix? Does Costco have it? I'm going there tomorrow.

Mmmm--my kids aren't big fans of spinach, but with this recipe, they might turn into ones!
