Peanut Butter Filled Chocolate Cookies

For me there are no two flavors that I love more than chocolate and peanut butter. These cookies came out so good that I know I will make them over and over again!!

There are two pieces to this recipe, the cookie dough and the filling. First the cookie dough:

1 1/2 cups flour
1/2 cup unsweetened cocoa powder
1/2 cup white sugar
1/2 cup brown sugar
1/2 teaspoon baking soda
1/2 cup butter or margarine, room temperature
1/4 cup peanut butter
1 egg
1 egg yolk only
1 teaspoon vanilla
1/4 teaspoon salt

In a bowl, cream together the butter, brown sugar and white sugar. Add in peanut butter. Add in the vanilla, egg and egg yolk. Mix well and then add in dry ingredients. Again, mix well. This is your cookie dough.



 Now it's time to make the peanut butter filling:

3/4 cup powdered sugar
3/4 cup peanut butter

Mix together until well mixed.


To make cookies, grab one teaspoon of dough. Flatten it out a bit in your hand and then grab a small spoon of peanut butter and place in the center.





Now bring the sides of the dough up over the peanut butter so that the peanut butter can not be seen.




Roll the cookie in white sugar and then flatten a bit. Bake at 375 degrees about 9 minutes.





These are just sooo yummy!!!
