Very Easy Chicken and Potato Soup

With the weather getting cooler, I love a hot bowl of soup.

3 chicken breasts
5 potatoes
1 medium onion, chopped
1 cup half and half

In a soup pot, boil the chicken. Save the chicken water. Place the potatoes and onion in the chicken water and cook on high about 20 minutes.

Cut the chicken off the bone and cut into small chunks. Add the chicken and half and half to the pot. Bring to a boil. Reduce heat and simmer about 10 minutes.

Note: I love to add something crunchy on top when I serve the soup such as croutons. I also sprinkle a bit of cheese on top.

That does sound good. I often do a whole chicken in the slow cooker and use the leftovers for other recipes, and to make soup and stock. I've also found that if I REALLY want a lot of extra chicken for later, I can tuck a few extra chicken breasts in the crockpot. I think I'll try a slight variation of this recipe!

Amy, we love our crockpot. I use it often. It's amazing to put it all in in the morning and have a hot tasty meal by 5:30 p.m.
