Broccoli Casserole (dairy free)

I was so happy when my daughter told me she liked this and hoped we'd make it again.

1 1/2 pounds broccoli florets (the store was out and I did buy the broccoli with stems)
4 eggs, beaten
3/4 cup mayonnaise
1/4 cup flour (I used whole wheat flour)
1 onion finely chopped
1 tablespoon garlic powder
1 1/2 teaspoons salt

Boil the broccoli until soft. Drain water and then mash it with a potato masher:

                                          

                                           

Add in the remaining ingredients and mix well:







Pour into a casserole dish and bake at 350 degrees about 45 minutes.



So, this is a keeper, one of those few recipes we'll make again :)

I didn't appreciate broccoli until I was an adult. This sounds so yummy!

Broccoli is one of the few veggies my son will eat without complaint. However, he doesn't like food "mixed together" yet (at age 7!!!) so I'm not sure a casserole would go over well. I tried Shepard's Pie with him recently and he wasn't a fan even though he likes everything in it by itself.
