Peach Quick Bread (dairy free)

I decided to buy a multi-pack of peaches while shopping at Costco. I wanted to try a new recipe and so I made a peach quick bread.

This recipe makes two loaves. I used my mini loaf pan to make 8 mini loaves and then a regular loaf pan to make the second loaf.




3/4 jar of Costco brand peaches(18 ounces)
3 cups flour
2 cups sugar
1 cup oil
4 eggs, well beaten
2 teaspoons almond extract
1 teaspoon vanilla extract
1 1/2 teaspoons salt
1 teaspoon baking soda


Chop the peaches. I thew them into my chopper and they were done in thirty seconds. Set aside. In a separate bowl, combine the dry ingredients and mix. Add in the oil and the eggs. Mix again. Add in the remaining ingredients, including the peaches and mix. Bake at 350 degrees. The small loaves baked about 35 minutes. The large loaf baked about one hour.
