Spinach Frittata In a Ramekin

One of my favorite vegetables is spinach. I made this dish with Egg Beaters.


I started with frozen spinach and cooked it down, draining off the water. I filled the Ramekin half full with spinach and then added chopped onion, one wedge of Laughing Cow Swiss Cheese, salt and pepper. I then filled with Egg Beaters and popped it into the microwave for about one minute and it was done. I sprinkled some shredded parmesan on top.
