Apple Pie Quick Bread

We had one more can of apple pie filling left and so I used it along with my new loaf pan.

1 can apple pie filling
1/2 cup white sugar
1/2 cup brown sugar
1 1/2 sticks of butter or margarine (3/4 cup) at room temperature, so that it's very soft
2 cups flour
2 eggs
1 tablespoon vanilla
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt

Mash the apples in a bowl. I used a mashed potato masher:



  • With an electric mixer, cream together the two sugars and the butter. Once creamy, add in the eggs and vanilla and mix again. Next, add in the apples and beat until mixed. Mix together the dry ingredients and then pour into bowl and mix everything together.


I made eight mini loaves and took them to work the next day. Bake at 350 about 40 minutes for mini loaves.


These are delicious!!
