Chocolate, Peanut Butter Brownies (dairy free)

I wanted to show you the end result first. My daughter has a new mini brownie pan and so we made brownies last night. They were delicious.

In a bowl, stir together the following ingredients:

3/4 cup flour
1/3 cup cocoa powder
1/2 teaspoon salt
1/2 teaspoon baking powder

In a separate bowl, beat together:

1/2 cup margarine (we use dairy free and soy free Earth Balance)
1 cup white sugar

Use an electric mixture and mix until creamy:

 It's hard to see in the photo, but this is very well mixed.

Pour in the dry ingredients and also add:

2 large eggs
1/4 cup peanut butter
1 teaspoon vanilla

I used the electric mixer and continued mixing until thoroughly mixed. At the very end, I gently added in:

1/2 cup chocolate chips (semi sweet, so there is no dairy)

Then spoon or pour into brownie pan. If you use a glass dish, grease the dish before putting the batter in.

For my small brownies, I baked them at 350 degrees for 15 minutes. I checked them at 12 minutes and they were not done. By 15 minutes they were cooked through.

These came out wonderful. Next time, we'll add chunky peanut butter so that the brownies will have nut in them also.

Those pans are so cool. I saw a little mini brownie bites pan at Williams-Sonoma the other day and wanted it so bad!

How did you like the silicone pan? I always have a hard time cleaning mine even though I use cooking spray.
