Broccoli and Cauliflower Casserole (dairy free)

I love vegetable casseroles versus plain old steamed veggies. This was super simple to make and quite tasty.

I began with two bags of broccoli and cauliflower from Trader Joe's. It's already cut and ready to use.

I used a chopper and 5 minutes later it looked like this:

Add in mayonnaise, onion soup, eggs and margarine. Mix well. Spray a casserole dish with butter spray and then sprinkle bread crumbs on the bottom.

Pour the broccoli/cauliflower into the casserole dish and sprinkle bread crumbs on top.

Bake for one hour at 350 degrees.


We made this last night and loved it. I took a huge piece to work today for lunch.

2 packages broccoli/cauliflower mix, chopped (about 24 ounces)
1/2 envelope onion soup mix
1/4 cup mayonnaise
1/4 cup margarine

2 eggs
bread crumbs



Mix the broccoli/cauliflower, onion soup, mayonnaise, margarine and eggs. Pour into prepared casserole dish. Cover with bread crumbs. Bake at 350 degrees for one hour. Should be golden on edges on set.

I need to get to Trader Joe's soon. I don't like cauliflower, but it sounds good. Maybe with just broccoli.
