Meatloaf

When I cook, I always look for new recipes. If we say "wow, that's the best" we'll make it again, but if it's just "good" then usually I'll look for another recipe.

Growing up, my mom made meatloaf once in a while and I never liked it. Then about 3 years ago my dad was in the hospital and meatloaf was being served in the hospital cafeteria. I ordered it. I actually loved it.

I've made this meatloaf several times as it's just that good. I decided to try a different meatloaf recipe and I ended up loving it.

Here is the original recipe I used as my base.

Here is how I made it.

2 pounds ground tukey (I buy ground turkey at Costco and it comes in 2 pound packages)
 1 tablespoon extra virgin olive oil
4-5 tablespoons of onion flakes (I did not have a real onion in the house)
1/4 or 1/3 cup of bread crumbs
egg substitute (the equivalent of one egg)
 4 tablespoons ketchup
1/4 cup grated parmesan
1/2 teaspoon dried basil
1/4 teaspoon dried thyme, crumbled
1/4 teaspoon black pepper

We did not have milk in the house, so I didn't use it and I never use garlic in cooking due to an allergy.

 I mixed it all together in a bowl and then placed in a loaf pan. I baked at 350 for one hour.



 It was a great tasting meatloaf.
