Cranberry Stuffing

I love cranberry. This is a fun way to use up leftover cranberries and stuffing mix.

1 can chicken broth - if you're vegetarian use vegetable broth
1 rib of celery, chopped
1/2 cup cranberries
1 small onion chopped
4 cups herb seasoned stuffing
salt and pepper to taste

In a saucepan, combine the chicken broth, salt, pepper, celery, onion and cranberries. Heat to a boil. Cover, reduce heat and simmer 5 minutes. Add the stuffing, stir and remove from heat. Pour into casserole dish and heat at 325 until heated through.

Hhmmm.. cranberries are so good, and healthy to boot. Is this stuffing good for turkeys? Thanksgiving is just around the corner, you know? ;)
