Noodle Kugel/Noodle Pudding

This recipe is actually a funny story. My friends son went to an international food day and tried a noodle kugel. He came home and said "mom sorry, but that was the best, better than yours" His mom had to know who made it and where the recipe came from. Turns out, this recipe was made by her own friend who she had given the recipe to. The only difference is my friend doesn't use cinnamon, her husband has an allergy. The cook for the food fair used cinnamon.



1 pound egg noodles, boiled (for me this was one and a half packages)
1 quart buttermilk
4 eggs
1/2 - 3/4 cup white sugar (depending on taste)
4 eggs
3/4 stick of butter ( I used a vegan stick to cut down just a bit on the dairy)

Mix this all together and pour into a casserole dish.

To make the topping:
1 to 1 1/2 cups finely crushed corn flakes
1 cup brown sugar
2 tablespoons butter or margarine (melted)

Mix the 3 ingredients together and sprinkle on top of casserole.

Bake at 350 degrees for about 45 minutes. I cooked it about 20 minutes uncovered, then covered for the next 15 minutes, then uncovered again for the last 10 minutes.

i made a sweet kugel a couple months ago with shirataki noodles, cocoa powder & a little chipotle - it turned out really good! it's like a rice pudding w/ noodles instead of rice! :)

I have never had this! But I really love the fact that there's corn flakes on top. :) My husband, who grew up with Italian cooking, always makes fun of all the Midwestern recipes I have that call for corn flakes or rice krispies toppings, but I think they're SO good!

Sounds so yummy. I think the corn flake crumbles on top would make it taste so good. Looks very good.

My mom makes the most delicious applesauce kugel. So unhealthy but we only have it once a year. LOVE it.
