Peach Jell-O Cake

I apologize to those who saw the first half of this post on Friday. I had written the post, but forgot to add the photos and so I took the post down. Now I have photos and am happy to share the recipe with you.

I began with a very simple yet really delicious white cake. All recipes say you can use a boxed mix for this, but I made the cake from scratch:

2 1/2 cups flour
1 1/2 cups sugar
1 cup almond milk (of course you can use regular milk, we just never have real milk in the house)
1/2 cup butter or margarine at room temperature
2 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon vanilla
2 eggs

Put everything in a bowl and mix with an electric mixer until very smooth. Pour into a 9x13 casserole dish and bake at 350 degrees 25-30 minutes.


Next, take a box of jell-o. I had a large box of peach jell-o. Mix with one cup boiling and stir until dissolved. Then I added two cups of ice. I just filled a two cup measuring cup with ice and poured in.

The jell-o will just star to gel. With a meat fork, poke many holes in the cake:




Pour the jell-o on top and allow it to seep into the holes of the cake. Refrigerate at least one hour. Then frost. I used a whipped cream frosting.

I loved the cake. My daughter does not like white cake, nor does she like peach, so I ended up eating a good portion of the cake myself. I was really pleased with the results.

Crazy question lol - You don't happen to have a picture of a cut piece of cake do you? My aunt makes this every holiday (red, white, blue - red/green, etc). Everyone loves it. I tried making it once and mine just wasn't as "pretty" inside as hers. I was wondering if allowing the jello to chill more was the trick. I always tell her she leaves out parts of her recipes when she gives them to me so mine don't come out as good as hers haha.
