Oatmeal Chicken (dairy free)

As many of you know, my daughter has become lactose intolerant. So, we've been busy trying out new recipes and many substitutions to make recipes dairy free. This recipe is delicious. My photo of the chicken on the broiler isn't very attractive so I took a photo of my plate:


I had some oatmeal I wanted to use up. I used egg white to coat the chicken and then rolled in a mixture of oatmeal, paprika, salt and pepper. We loved it.

1 1/2 cups Quaker Oatmeal
1/2 envelope onion soup mix
3/4 tablespoon paprika
3/4 teaspoon salt
1/4 teaspoon pepper

We use skinless chicken and so I poked holes in the chicken prior to rolling in the oats. I also turned the chicken over half way through baking. Cook at 375 degrees about 45 minutes. Chicken should be cooked through.

This sounds really good. My doc thinks that I might be lactose intolerant.
