We are rice lovers. To try to stay just a bit healthy we eat more brown rice than white rice. I found this rice casserole recipe and decided to try it with a twist:
1 1/2 cups brown rice
2 1/2 cups low sodium chicken broth
1 tablespoon non-dairy margarine
3/4 teaspoon table salt
I put the rice in a casserole dish. I then put the broth, margarine and salt in a measuring cup and microwaved for 3 minutes. I poured it over the rice and since I did not have heavy duty aluminum foil, I used two sheets of regular foil and covered. I baked it at 375 degrees just over an hour.
Adding the chicken broth made all the difference in taste. We'll absolutely make this again.
