Beef and Spinach Enchiladas
2 pounds ground beef
1 large onion, chopped
1 package frozen spinach, thawed
2 cans tomato soup
2 cups jack cheese, shredded
1 can enchilada sauce
1 can olives, drained
1/2 cup parmesan cheese
1 1/2 teaspoons salt
1 teaspoon oregano leaves
1/4 teaspoon pepper
12 tortillas
Brown ground beef in a frying pan. Save 2 tablespoons of the drippings. Drain the remaining grease. Add the onion, spinach, oregano, pepper and parmesan cheese. Cover and simmer until ingredients are heated through.
In a separate pan, combine the tomato soup and enchilada sauce. Heat on low for 10 minutes. Dip each tortilla into the soup mixture and cover. Lay down tortilla and Place about 1/2 cup of meat mixture in the tortilla. Add a few olives and roll up. Place in casserole dish. Add remaining sauce to top of enchiladas. Bake at 350 degrees about 30 minutes. Sprinkle cheese on top and bake 5 additional minutes.

Snickerdoodle Cookies
I have a daughter who loves Snickerdoodles:
2 2/3 cups flour
1 cup shortening
1 1/2 cups sugar
2 eggs
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon cream of tartar
2 teaspoons sugar mixed with 2 teaspoons cinnamon for rolling cookies in
Cream together the shortening and sugar. Add eggs, one at a time and beat well. Sift together the flour, baking soda and salt. Stir the sifted ingredients into the other ingredients and mix. Chill for one hour.
Make small balls and roll them in the sugar and cinnamon. Place on ungreased cookie sheet. Bake at 400 degrees 8-10 minutes.

Corn Flake Halibut
I love white fishes. This is a yummy recipe for white fishes such as halibut, white snapper or tilapia:
4 fish fillets
1/2 cup milk
4 tablespoons butter, melted
2 cups corn flakes, crushed
Soak the fish in the milk for 5 minutes. Pour the melted butter over the fish. Sprinkle the cornflakes on the fish and bake for about 30 minutes at 350 degrees. Baking time will vary according to thickness of fish. Fish will flake when done.

Lemon-Apricot Bread
This recipe came from one of my lower fat cookbooks. It has a ton of flavor but is lower in fat and calories than other recipes:
1 1/3 cups nonfat buttermilk
1/2 cup chopped dried apricots
1/4 cup low fat margarine, melted
2 3/4 cups flour
1 teaspoon baking powder
1 teaspoon baking powder
1/4 cup sugar (try using some Splenda and some sugar)
1/4 teaspoon salt
1/4 teaspoon ground nutmeg
1 egg, beaten lightly
1 teaspoon grated lemon rind
Combine the flour, baking soda, baking powder, salt, sugar and nutmeg. In a separate bowl, combine the buttermilk, apricots, melted margarine, beaten egg and lemon rind. Add to dry ingredients and mix just until moistened.
Spray a loaf pan with cooking spray. Pour batter into loaf pan and bake at 350 degrees for 45 minutes. Allow to cool 10 minutes before removing from pan.

Not Your Typical Hash Browns and Eggs
This is a fun recipe to make:
1 package hash browns
1 egg, beaten
8 tablespoons half and half
1 teaspoon salt
3 tablespoons butter, melted
8 eggs
Put potatoes into a bowl and cover with very hot water. Allow to stand for 10 minutes. Drain water. Add melted butter, beaten egg and salt. Mix. Using custard cups, press potato mixture into 8 cups. Use a utensil to help press the potatoes onto the bottom and up the sides of the cup.
Place cups on baking sheet and bake at 400 degrees for 20 minutes. Remove from oven. Without breaking yolks, break one egg into each cup. Spoon one tablespoon of the half and half on top. Bake an additional 15-20 minutes. Remove from cup and serve.
Note: I use milk instead of half and half.

A Brand New Recipe
Usually when I post a recipe, it's something I've tried before. Today, I found a recipe and I've never tried it. I want to know what you think of it. I'm having a hard time imagining it, though I see it being made in the next day or two here:
Cole Slaw Souffle Salad
1 package lemon jell-o
1 cup hot water
1/2 cup mayonnaise
1/2 cup cold water
2 tablespoons vinegar
1/4 teaspoon salt
1 1/2 cups finely shredded cabbage
1/2 cup radish sliced
1/2 cup sliced celery, fine
2-4 tablespoons diced green peppers
1 tablespoon diced onion
Dissolve jell-o in hot water. Blend in mayonnaise, cold water, vinegar and salt. Chill until partially set. Beat until fluffy and add other ingredients. Pour into mold and chill.
If you try this, let me know how you like it.

Easy Peach Cobbler
This is one more microwave recipe:
1/2 box yellow cake mix
1/4 cup melted butter
3 tablespoons brown sugar
1 1/2 teaspoons cinnamon
1 - 22 ounce can peach pie filling
In a glass pie dish, spoon filling on bottom. Evenly distribute cake mix on top. Pour the melted butter over the top. Mix the sugar and cinnamon together and sprinkle over the top. Microwave 9-11 minutes depending on microwave power. Allow to cool 10 minutes and serve.

Microwave Honey Chicken
This is a very quick and easy meal that you can make in the microwave:
1-2 pounds chicken (any combination of breasts, wings, thighs or legs)
1/3 cup honey
1/3 cup chili sauce
1/2 teaspoon ginger
1 teaspoon soy sauce
Place chicken in a casserole dish. Mix together remaining ingredients and pour over chicken. Cover dish with waxed paper and microwave for 10 minutes. Gather up marinade and re-pour over chicken, to recoat. Recover and microwave an additional 11 minutes or until chicken is done.

1/2 cup melted butter
8 ounces cream cheese, softened
1 teaspoon lemon juice
Ritz crackers
Cook the spinach and artichoke according to package directions. Place the artichokes in the bottom of a casserole dish. Mix together the spinach, butter, cream cheese and lemon juice. Pour this on top of the artichokes in the casserole dish. Crush the crackers and sprinkle on top. Bake at 350 degrees for 25 minutes.
