Lemon Loaf

Have I mentioned I have a lemon tree? I'm always seeking new lemon recipes. This is a fairly simple lemon bread that comes out great:

1 stick of butter, softened
1 1/2 cups sugar
4 eggs
2 cups flour
1 1/2 cups light cream
4 teaspoons baking powder
1 teaspoon salt
2 tablespoons grated lemon peel
1 tablespoon lemon extract
1/2 cup chopped toasted almonds (optional)

Cream together the sugar and butter. Add the eggs, one at a time and beat at high speed 4-5 minutes. Beat in lemon peel, lemon extract, baking powder and salt. Reduce speed and add in cream and flour. Hand stir in the almonds.

This should be enough for two loaf pans. Bake 52-55 minutes at 350 degrees.

Note: Lemon extract is very strong. If you use lemon juice, use at least double the amount of liquid.
