1 cup margarine
1/2 white sugar
1/2 cup brown sugar
2 3/4 cups flour
1 teaspoon salt
1/2 teaspoon baking soda
2 eggs
1 1/2 teaspoons vanilla
1/2 cup crushed candy canes
Cream together the margarine and sugars:
Add in the eggs, mixing well after each egg. Add in the vanilla and mix again. In a separate bowl, mix together the dry ingredients. Add to the sugar mixture in thirds, mixing well after each addition. Fold in the crushed candy canes.
Drop by spoonful onto a greased cookie sheet.
Bake at 375 degrees 12-14 minutes. Transfer to cooling rack.

Breaking the candy canes is SO hard! They always end up being either too big or too small when I do it. I made chocolate candy cane cookies this year, but maybe next year I will try these!

What a great way to use up the leftover candy canes! I usually stick them in a bowl and use a meat tenderizer to chop them up. Still messy though.

Yum - I need to try these! I can't say I've ever tried to intentionally break candy canes. They just always end up breaking on their own.
