Brownie In a Mug

I was craving a brownie. So I found this brownie in a mug recipe and it's the best thing ever. I wish the photos looked better, but you'll have to trust me, I couldn't stop eating it. I ate the whole thing!!

In a coffee mug, mix together:

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa powder
2 tablespoons vegetable oil
2 tablespoons water
dash of salt

Mix it well:


Bake in microwave for about 1 1/2 minutes:


I did not put ice cream on top. I just ate it as is and as I said I finished it all. Next time I'm going to add mini chocolate chips. If you make this, make sure you use cocoa powder and not hot cocoa mix or chocolate milk mix. You need something with no sugar in it.

Chex Coated Fish

We try to make fish at least a few times a week. I like to do something that helps cut the fish taste just a bit.

This was simple and we loved it:

1-2 tablespoons butter/margarine
1 teaspoon lemon juice
Crushed Corn Chex




Melt the butter and add in the lemon. Brush the lemon butter on the fish and then sprinkle with the Chex. We will make this again and we'll use more Chex. I was so uncertain how the Chex would taste on the fish that I used a small amount. My daughter told me we should double it next time.

Honey Mustard Salad Dressing (dairy free)

I love homemade salad dressings. This was beyond easy to make:

1/4 cup mayonnaise
1 tablespoon honey
1 tablespoon yellow mustard
1/2 tablespoon lemon juice




It really as simple as mix it all together and pour onto salad.

Almond Crusted Chicken (dairy free)

This was incredibly easy to make. Measure out about 1/3 cup of finely crushed slivered almonds.


Mix with about 1/3 cup bread crumbs, 1/2 teaspoon of salt and 1/2 teaspoon of pepper. Place the powder in a ziplock. Coat the chicken with egg white or mayonnaise and then shake:


Bake at 350 degrees until done:



I was afraid that this would be bland, but it was delicious. Almonds have quite a bit of flavor.

Vegetable Kugel/Casserole (non dairy)

I was so happy when my daughter told me she liked this. I wanted to use up lots of veggies and combine them all into this one casserole.

2 zucchini
3 small-medium carrots
1/2 onion
2 medium potatoes
3 eggs (mine are extra large)
4 tablespoons vegetable oil
3 tablespoons flour
salt and pepper to taste (I used about 1/2 teaspoon of each)

Chop all of the vegetables. I have a few different choppers. I used my electric one for this so all was chopped in under 10 minutes.








Mix everything together in a bowl and then pour into a lightly sprayed casserole dish. Bake at 350 degrees about 45 minutes. I had to cook mine a bit longer, but it was because I had other items in the oven that night also.

Bake Meatballs with Sweet and Sour Sauce (non dairy)

I was really excited when I saw this meatball baker for sale (yes it's from Avon)


Make your favorite meatball recipe. Here's a meatball recipe I posted last month. Place your meatballs in the meatball cooker:



I baked at 350 degrees for about 45 minutes. While they were cooking I made the sauce. This is one cup grape jelly and two cups chili sauce.


 I brushed sauce on each meatball, then baked another ten minutes.


I severed over rice as I love rice with sauce. I should mention, the meatball rack is removable leaving an awesome baking tray underneath.

Chicken and Stuffing (non dairy)

This was so simple to make and we all loved it.

1 box stuffing mix
8-12 ounces of broccoli florets
vegetable broth (you can also use chicken broth)
chicken


I cooked the broccoli just so it was soft enough to put through the chopper. Then I made the stuffing using vegetable broth in place of the water called for. I did NOT use butter or margarine. Once the stuffing was done, I mixed in the broccoli and spread in the bottom of a casserole dish.


I then seasoned the chicken with paprika and a little bit of Lawrys seasoned salt.


Bake at 350 degrees about 45 minutes, until the chicken is done. I apologize for this last photo, the steam got in the way of the photo.


We actually thought if we make this again, we'll add in more vegetables next time.

Ground Turkey, Frito, Tomato Ramekin

I truly don't know what to call this. It was delicious but perhaps you can help me better name this.

1 pound ground turkey
1 can Rotel tomatoes and chilies
1 small package chili cheese fritos
shredded cheese

Brown your ground turkey:


Drain and add in the can of Rotel tomatoes and chilies:


Place fritos in the bottom of the ramekin dishes:


Spoon in the meat mixture:


Cover with shredded cheese:


Bake 10-15 minutes at 350 degrees:


You can also put this into a casserole dish. I just love using my ramekins.

So, what would you name this?

Turkey, Spinach and Brown Rice (dairy free)

This was so simple to make and we loved it!

1 cup brown rice
1 cup liquid (we used vegetable broth)
8 ounces spinach
Turkey tenderloins (I found these on sale at Trader Joes)
Italian seasoning, paprika

Pour the rice into the casserole dish. Cover with vegetable broth. Add the spinach on top.


 I seasoned the turkey with paprika and Italian seasoning.



I covered the casserole dish with foil for the first 30 minutes. Then uncovered and baked an addition 30 minutes at 350 degrees.


As I said we both loved it. My daughter said she'd like me to make this again. For a household that seldom repeats a recipe this quite a compliment.

Baked S'mores

I've loved s'mores ever since I was a little girl. At home, we don't have a campfire and I was craving a s'more so I made them right in the oven.

Graham crackers
Mini marshmallows
Hershey's Chocolate Bar

Lay your graham crackers out on a covered cookie sheet. I used tinfoil to cover mine. Next time I'll use parchment paper.


Sprinkle marshmallows on top of the graham crackers. Set the oven to 350 degrees and let the marshmallow get a little brown.



Immediately put the chocolate on top of the marshmallows. You need the heat from the marshmallows to melt the chocolate.


Cover with another graham cracker and enjoy!



I only made two of these, one for me and one for my daughter. They were delicious!!!

Zucchini Casserole

This recipe can very easily be dairy free by using dairy free cheese. I found this recipe and followed it to the letter. We loved it.

1 pound ground turkey
2 large zucchini, halved lengthwise
3 cups Classico Tomato and Basil Sauce
1 - 8.75 can whole kernel corn, drained
1 cup shredded cheese

Place the sliced zucchini in the casserole dish:


Brown the ground meat and drain. I mixed everything together in a bowl:


Pour the mixture over the zucchini:


Bake at 350 degrees for about 20 minutes. Sprinkle cheese on top and bake an additional ten minutes:


The zucchini on the bottom was not "soft" which for us was just fine. We ate this for dinner and then I took it for lunch the next day and finished it off. We really did enjoy it.
