2 pounds ground turkey
1/2 onion, chopped
1 small can of corn
4 ounces of sour cream (we used light)
1 small can of diced green chiles
2 cups shredded cheese (we used a 4 cheese mexican blend)
1 can enchilada sauce (we used a red sauce)
flour tortillas
Brown the ground turkey with the onions:
Next, add in the corn and mix together:
Now add in the sour cream and green chiles:
I did this all in the microwave. I heated it through and then mixed in half the cheese:
Line a large casserole dish with enchilada sauce:
Fill your tortillas and place in the dish. Cover with sauce and cheese. I meant to take a photo before I added the cheese and forgot so I stopped after one handful. I used an entire cup of cheese on the top.
Bake, covered at 350 degrees 30-45 minutes.
I love mexican food and so thought these were great. If you like your food spicier, add in diced jalepenos to the meat mixture and use a hot/spicy enchilada sauce.

This reminds me that it's almost been a YEAR since I last made enchiladas! Yikes! It's such an easy, filling meal, I'm going to have to put it on my to-do list. I love those green chiles!

The tortillas were like dough! I should of deep fried them before or something. What a waste! The filling was good though so I think I will just do the tortillas different next time.
I used Corn tortillas warmed in the microwave under a wet papertowel
do you think these are suitable to freeze? would love to double batch but worried about freezing…..what do you think???
Although I've never frozen them before, I don't see why not. For freezing, I actually use the throw away casserole dishes. I try to buy them at the 99 cent store.
