Spinach and Cheese Frittata

In order to have a recipe blog, you have to continually try new recipes and tweak old recipes. We very seldom eat the same thing twice. I did say seldom. This frittata recipe is one of the best things I've made in a really long time. I already have plans to make it again this week and take it to work for others to enjoy.

1 cup flour
1 teaspoon salt
1 teaspoon baking powder
1/2 cup margarine
3 eggs
1 cup milk (I used soy milk)
1 pound Monterey Jack cheese, grated
4 cups fresh spinach, cut into bit sized pieces

I will make one small change the next time I make this. I will cut down on the margarine. One half cup equals 8 tablespoon. I am going to cut it back to 5 tablespoons next time.

Melt the butter in the casserole dish and set aside.

Beat the 3 eggs:



Add in the remaining ingredients, except the spinach:


We used just over 4 cups of spinach leaves:



Blend everything together:


Pour into the casserole dish and bake at 350 degrees about 45 minutes.




As I said this was EXCELLENT!!

That's so funny! I hardly ever repeat a recipe, but I DO keep a binder of what I really like. And I don't even have a recipe blog. :) I've only ever made frittata once. This looks like a good one.

You're right, that IS the problem with food blogging, rarely do you eat the same thing twice. I'm constantly finding new things and my family is stunned when a repeat recipe hits the table.
