In a saucepan, combine:
2 sticks of margarine
1 1/4 cup soy milk
1 egg, beaten
Do not boil, just let it all blend together:
In a large bowl, combine:
3 cups flour
4 1/2 teaspoons baking powder
1/2 teaspoon baking soda
1 1/4 - 1 1/2 cups white sugar
1/2 teaspoon salt
Stir together and then pour in the melted margarine mixture.
Fold in one package of frozen blueberries (about 2 cups)
Pour into a greased muffin tin.
Bake at 400 degrees about 30 minutes.
We were pleased with these. They are not super sweet and because we used margarine, they didn't have that heavy butter taste.

I haven't made muffins for a while. It's high past time I got out the muffin tins and this recipe looks awesome!
i love using frozen berries in muffins! i like them better than using fresh b/c they don't burst as easy during baking and you end up with more whole berries in the end product! love it!

Those frozen blueberries make great muffins! I've bought them from Trader Joe's intending to eat them as a snack, but it never happens & I end up making muffins or pancakes. :)
Have you ever tried using coconut oil instead of butter in your baking? I haven't yet, but I've heard it works well.
