Chocolate Pudding Cookies with Chocolate Chips (dairy free)

I've had a box of pudding sitting in my pantry for quite a while now. It was sugar free chocolate pudding. I decided to put it to good use and made some wonderful cookies.

1 box chocolate pudding - I had the large box
1 cup packed brown sugar
1 cup butter or margarine (we used a vegan margarine)
2 cups flour
2 eggs
1 teaspoon baking soda
chocolate chips (for dairy free cookies use bittersweet chips)




With an electric mixer cream together the butter and the sugar. Add in the pudding mix and mix well. Add in the eggs and again mix well. Add in the flour and baking soda. At this point I had to mix by hand as the batter is on the dry side. Fold in the chocolate chips. Drop by spoonful onto a baking sheet. The cookies do not spread when baking. What you see above are the finished cookies. Bake at 350 10-12 minutes.

I ate about 6 of them they were so good!!
