Carrot Kugel/Carrot Casserole (dairy free)

This is a very sweet, delicious side dish. My daughter told a few friends her mom had made this and they were shocked as my daughter does not like or eat carrots.

4 large carrots, peeled and cut into pieces
1 cup flour
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup oil
2 large eggs
1 1/2 teaspoons baking powder
1 teaspoon vanilla

Boil carrot pieces 25-30 minutes. They should be very soft. Drain and mash with a potato masher.



Add in remaining ingredients and mix until well blended.


Pour into a springform pan and bake at 350 degrees and bake 50-60 minutes. A toothpick inserted in the middle should come out clean.



My daughter already asked when I'm making this again.
