Apricot, Teriyaki Chicken (dairy free)

I saw a crockpot recipe for teriyaki/apricot pork chops, which inspired me to try something very similiar with chicken.

These came out great. We will make this recipe again and I don't often say that. I bought skinless, boneless organic chicken thighs at Trader Joes:

1 package chicken pieces
2/3 cup apricot preserves (I used organic Trader Joe's brand)
1/4 cup teriyaki sauce
2 tablespoons mustard (I used regular French's mustard)
1 teaspoon ginger
1/2 teaspoon pepper
1/2 teaspoon salt (I used just a bit less than 1/2 teaspoon)

Mix it all together and pour over chicken. I baked at 350 for about 45 minutes. Like I said, we loved them!!

I like my chicken itself really dried out, but this is perfect because it's super saucy which would take away the boring fact I like my chicken crispy. lol

Mmmm. I have all the ingredients for this - will have to give it a go. The combo of Teriyaki and the apricots sounds super.
