Spinach and Cheese Frittata (Ramekin)

There were two things I wanted for diner, I wanted spinach and I wanted to use my ramekin dishes.

This recipe came out great. As many of you know I seldom make a dish twice unless we really love it. I'll make this again :)

10 ounces frozen, thawed spinach
3/4 cup cottage cheese (I used non fat)
1/2 cup shredded parmesan cheese
1/2 can diced chilis
1/3 to 1/2 diced onion (I used my chopper to dice it up)
1 egg
salt and pepper to taste (for me this is about 1/4 teaspoon salt and 1/8 teaspoon pepper)

Mix all of the above together:

Divide into 4 ramekin dishes:

Bake at 375 degrees 20-30 minutes. I used the top rack and cooked this about 26 minutes.

They were delicious!!
