Peanut Butter Chicken (dairy free)

I took chicken out this morning. When I went to set it on the counter to defrost, I saw a jar of peanut butter that my daughter had left out. I decided to find a peanut butter chicken recipe and try it.

2-4 pieces of chicken (I made two boneless, skinless chicken breasts
1/4 cup flour
1 egg
1/2 cup smooth peanut butter
2/3 almond milk or other milk substitute
1 teaspoon salt
1/2 teaspoon pepper
1/2 cup bread crumbs

Mix the peanut butter, almond milk, egg, salt and pepper. Dredge the chicken with flour. Next, coat with the peanut butter mixture and finally, coat with bread crumbs. Bake at 375 degrees about 45 minutes or until chicken is cooked through.




It was delicious. My first bite was a bit "odd" as you don't often have chicken and peanut butter in the same bite. My next bite I decided I loved it!!

i prefer peanut oil in my cooking, but it is definitely an oriental taste. it's great!!
