Sweet Potato Casserole

We had the best dinner tonight. My daughter helped me make this. We had a base recipe and I said to her "use a bit less sugar and a bit less butter." We ended up with an amazing recipe:

2 large sweet potatoes
1 cup brown sugar (do not pack)
1/2 cup milk (we use non fat)
1/4 cup melted butter
2 eggs lightly beaten
1 teaspoon vanilla

Boil and mash the sweet potatoes. I cut each potato into thirds so they would cook quicker. I boiled them with the skin on. Once they were done, I removed the skin. Mix the mashed sweet potatoes with the remaining ingredients and pour into a casserole dish.



To create the topping, mix together:

just under 1/2 cup brown sugar (do not pack)
1/3 cup flour
just under 1/3 cup melted butter
1 cup crushed Corn Flakes

Mix it all together and sprinkle on top.



Bake about 40 minutes at 350 degrees. This is the end result:



The original recipe called for double the butter and more sugar. It was plenty sweet without. The original recipe called for crushed pecans on top. We don't like pecans and so we used Corn Flakes. Oh and the original recipe called for canned yams. This was amazing. We will absolutely make this again.

Yum!!! Sweet Potatoes make me think of Thanksgiving :)
