Apricot Chicken (dairy free)

We have an apricot tree in our front yard. For two weeks, apricots fall like crazy.

This was just super simple to make. I seasoned the chicken with salt and pepper and then cut up the apricots, let the chicken marinate in the apricot juice, then baked with the apricots on top. It came out with a nice, sweet, apricot taste.
