2 chicken breasts
1 teaspoon basil
1 teaspoon italian seasoning ( I did not have the oregano called for in the original recipe)
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 cup parmesan (I did not have fresh and so used powdered)
1/4 cup swiss cheese (I did not have shredded and so I used two slices cut into small pieces)
1/4 cup chopped spinach
In a bowl mix together everything except the chicken and spinach.
Now split open the chicken breasts.
Now, stuff each of the chicken breasts:
I had a little bit of mixture left over and so I sprinkled it on top of the chicken.
Bake at 350 for about 45 minutes.
This last photo does not do the recipe justice. As I said, it was delicious!!

You know, for someone who bakes/cooks so much, I've never made a stuffed chicken recipe. This looks yummy and healthy (I'm trying to eat healthier).
I am always looking for new chicken recipes...b/c I get bored with it. This looks yummy!
I haven't been brave enough yet to try stuffed chicken. It looks so complicated!
