Left Over Turkey Quiche

I was looking for a recipe to use up some leftover turkey and found this turkey quiche. We will so make this again. It was soooo good!!



1 cup Bisquick
1 1/2 tablespoons non dairy margarine
4 eggs
1/2 cup olive oil
3 cups zucchini, chopped
1/2 cup shredded parmesan cheese
1/4 cup onion flakes (I did not have real onion in the house)
1/2 teaspoon basil
chopped left over turkey or chicken
1/2 cup hard swiss or other flavorful cheese

Mix eggs, oil and Bisquick until blended. Add in remaining ingredients and mix well. Pour into greased pie pan and bake at 350 degrees about 30 minutes. Test for doneness. I baked another 12 minutes and it was done.

I wasn't sure if my daughter would like this. She said "mom it's like a turkey sandwich, turkey, bread and cheese, yum!!"

As I said, we'll make this again. We really loved it.

This looks really good. I froze some zucchini earlier in the season... I may have to try this soon!
