Honey Glazed Carrots (dairy free)

I enjoy looking in my pantry and then trying to create a recipe for the ingredient. I saw a container of honey and knew I had baby carrots in the refrigerator and a lemon tree in the backyard.

1 package baby carrots
2 tablespoons margarine
2 tablespoons honey
juice from one half lemon, should be about one tablespoon or so.
salt and pepper to taste

Boil the carrots 5-10 minutes until they are starting to soften:


Drain out the water and add in the remaining ingredients. A glaze will form. I stirred for about 5-10 more minutes and then served.


My daughter loved these.
