Ranch Dressing Potatoes

This particular recipe was made with Hidden Valley Ranch, so it's not dairy free, but we do buy a brand of ranch dressing which is dairy free, meaning this recipe could very easily be turned into a dairy free recipe.

In a mixing bowl combine:

3 large potatoes cut into cubes (we took the skin off, but you can certainly leave it on)
1 teaspoon salt
1/4 - 1/2 teaspoon pepper, depending on taste
1 cup ranch salad dressing
bread crumbs

Toss to coat potatoes, pour into casserole dish and then sprinkle on bread crumbs. Bake about one hour. Cover for the first 30 minutes and then uncover for the last 30 minutes.

Well try this again with an italian salad dressing.
