Lemon Chicken


This was so easy to make. We have a lemon tree in the backyard.

3 tablespoons lemon juice
3 tablespoons melted butter
1/4 teaspoon salt (I used a little less)
1/8 teaspoon pepper
breadcrumbs
chicken

The original recipe also called for one clove of minced garlic. Melt the butter and add in the lemon juice, salt and pepper. I poked holes in the chicken and the poured on the sauce, leaving some of the sauce for dipping later. Once the chicken was nicely coated with the sauce, I hand spooned on the bread crumbs. I baked for 45 minutes at 350 degrees. I loved the flavor. My daughter used the leftover sauce for dipping and also loved it.

Ummm....you have a lemon tree in your back yard?! So jealous! haha!
