One thing I love about winter time is pumpkin:
1 box pumpkin spice cake mix
1 - 15 ounce can of pumpkin
3 eggs
1/3 cup water
1/3 cup oil
Using a mixer, blend all ingredients together for two minutes. Pour into cupcake holders. Bake for 18-20 minutes at 350 degrees.

My mother-in-law had a recipe very similar to this, but this one seems way easier!! I'm going to have to try this!
