Apricot Casserole

While this recipe calls for canned apricots, if you have fresh apricots this recipe is even better.

15 ounces apricots, halved
16 ounces light brown sugar
1 sleeve crumbled Ritz crackers
1 stick of butter
1/4 teaspoon cinnamon

Place apricots on bottom of 9x13 casserole dish. Sprinkle half of the brown sugar over the apricots. Then half the cinnamon and half of the Ritz crackers. Cut the butter into pats and place half of the stick on the top. Repeat layers. Cook for one hour at 300 degrees.
