Chicken Salad

I love chicken salad sandwiches. This is just one recipe for chicken salad:

3 large chicken breasts, cooked and cubed
1/4 cup onion, chopped
1/4 cup green bell pepper, chopped
1/4 cup slivered almonds
1/4 cup crushed pineapple, drained
1/4 cup sweet pickles, chopped
1/4 cup celery, chopped
1 cup mayonnaise

Mix everything except mayonnaise in a bowl. Coat with mayonnaise, chill and serve.

If you don't like sweet pickles, try dill, or try pickle relish. I'll also use chopped green olive instead of sweet pickles. If you have carrots, try shredding some into the chicken salad. If you don't have pineapple, try raisins or cranberries. This is a really fun recipe to play around with flavors on. Enjoy!!
