Almond Crusted Chicken (dairy free)

This was incredibly easy to make. Measure out about 1/3 cup of finely crushed slivered almonds.

Mix with about 1/3 cup bread crumbs, 1/2 teaspoon of salt and 1/2 teaspoon of pepper. Place the powder in a ziplock. Coat the chicken with egg white or mayonnaise and then shake:

Bake at 350 degrees until done:

I was afraid that this would be bland, but it was delicious. Almonds have quite a bit of flavor.

Audrey :)

p.s. a huge thank you to Kelly for her email this morning that I had forgotten to share the other ingredients in the powder.

Seems absolutely easy. I would try this with little salt and pepper and the almond too.
