I found this recipe in a cookbook I bought at a garage sale. I wasn't sure how it would come out as it sounded a bit "odd" but I made it anyway and it was actually very good. It's also very simple to make.
1 pound ground turkey
1 can vegetable soup (must be ready to serve style) - I used Pregresso brand. It needs to be a can about that size.
1 package of stuffing mix (we buy these at the 99 cent store)
1/2 cup shredded cheese
Brown the ground turkey. Drain and then add in the can and soup and mix. Set aside. Prepare the stuffing according to the package directions. Allow it to cool just a bit. Evenly spread half the stuffing in a 2 quart casserole dish. Spoon the ground turkey mixture over the stuffing. Next spread the remaining stuffing over the ground turkey. Sprinkle the cheese on top and bake at 350 degrees about 30 minutes.

hmmm... not a huge fan of stuffing or cheese, but i know my bf would LOVE this! it's like thanksgiving in a crockpot!
