My next door neighbor grows several varieties of squash and zucchini. I found a recipe and decided to try the recipe with the zucchini. I used the Smart Balance margarine and the cookies came out great!!
3/4 cup Smart Balance margaine (softened)
1 1/2 cups sugar
Cream these two ingredients together. The mixture was quite fluffy and soft.
Add in:
1 egg
1 teaspoon vanilla
Mix well. Add in 1 1/2 cups shredded zucchini
Add the following:
2 1/2 cups flour
2 teaspoons baking powder
1 teaspoon vanilla
1 teaspoon cinnamon
1/2 teaspoon salt
Once mixed, fold in about 8 ounces of non dairy chocolate chips.
Drop by spoonful onto greased cookie sheet and bake at 350 degrees for 15 minutes.
These came out crunchy and while you can see the zucchini, you really don't taste it. Awesome way to sneak vegetables into your kids lives :)
