One of my daughter's loves kishka. I actually don't care for it, so she only gets this dish when she visits my mom. However we found a mock version of kishka that is pretty good:
1 pound of Ritz crackers, mashed
1 pound carrots, grated
2 sticks of butter, melted
2 large onions, grated
3 stalks of celery
1/4 cup warm water
Blend the celery, carrots, water, onions and butter in a food processor. Blend in the crackers. Shape into 4 long rolls. Place rolls on cookies sheet/s. Bake for one hour at 350 degrees. Slice and serve.
