1 1/2 pounds zucchini
1/2 cup butter
2 tablespoons oil
1/2 cup parsley, chopped
1 small clover garlic, minced
1/4 loaf of french bread
3 eggs, well beaten
salt and pepper to taste
Slice zucchini into round slices. Saute the zucchini in butter and oil. Zucchini should be tender.
Soak bread in cold water for 5 minutes, then squeeze until almost dry. Add bread to zucchini. Add remaining ingredients except eggs into skillet. Pour eggs over mixture, blend well and brown.
