Spinach Casserole (dairy free)

One vegetable we all love is spinach. This came out great. We use a non dairy/non soy margarine:

We had a generic store brand chopped spinach.

2 cups cooked spinach
1 teaspoon salt
2-3 tablespoons onion flakes (I did not have real onion in the house to use)

Mix these three ingredients together in a small casserole dish.

4 tablespoons non dairy margarine
2/3 cup flour (I used regular Gold Medal white flour)
1 cup water, divided in half

Melt the margarine in a skillet over low to medium heat. Add in the flour and mix with the margarine. Now add in 1/2 cup of water. Mixture will be very thick. Add in the other half cup water. See how thick your sauce is. It should be fairly thick. If you need more water, add in 1/4 cup water at a time until you have the desired consistency.

This is how the batter looked before cooking. Bake at 350 degrees about 30 minutes. Edges should be browned.

It was delicious. I made it for dinner last night. We finished it off tonight and my daughter said "there's no more?" She really liked it. We are having so much fun trying all these new non dairy recipes.

I have tried a similar recipe tot his but it had cheese in it if I remember correctly. We really liked it. Thanks for dropping by my blog and leaving such a nice comment!
