Lemon Bars

I was craving lemon bars today. I found a super easy recipe on the Pillsbury site suggesting sugar cookie dough as the base. Please forgive the photos, they were taken with my phone as my camera was not with me.

1 tube of refrigerated sugar cookie dough (I used store brand)
4 eggs, lightly beaten
1 1/2 cups white sugar
2 tablespoons flour
2  tablespoons butter or margarine, softened
2 tablespoons grated lemon peel 
1/3 cup fresh lemon juice
1 to 2 tablespoons powdered sugar
 
Unroll the cookie dough and create your base:

 

Bake about 20 minutes at 350 degrees. Combine the remaining ingredients in a bowl and lightly beat with electric mixer.


 Once the cookie dough is done, pour the lemon mixture over the cooked cookie dough.


Bake another 20 minutes:


 I did not dust with powdered sugar. I ate them as is. It was interesting with the cookie base.

  5. I love lemon bars, but lemon bars with sugar cookie dough as the base?! Oh, that sounds so good. If you're not crazy about them, you can send them my way. ;)

  6. i love lemon bar, but since hubby does not like sweet, i usually just buy a slice than make it, since i am afraid i will finish what i will make quick and i am gaining weight :(
