1 tube of refrigerated sugar cookie dough (I used store brand)
4 eggs, lightly beaten
1 1/2 cups white sugar
2 tablespoons flour
2 tablespoons butter or margarine, softened
2 tablespoons grated lemon peel
1/3 cup fresh lemon juice
1 to 2 tablespoons powdered sugar
Unroll the cookie dough and create your base:
Bake about 20 minutes at 350 degrees. Combine the remaining ingredients in a bowl and lightly beat with electric mixer.
Once the cookie dough is done, pour the lemon mixture over the cooked cookie dough.
Bake another 20 minutes:
I did not dust with powdered sugar. I ate them as is. It was interesting with the cookie base.

ReplyDeletei love lemon bar, but since hubby does not like sweet, i usually just buy a slice than make it, since i am afraid i will finish what i will make quick and i am gaining weight :(
